Heavenly chocolate brownies
Recipe
200g dark chocolate
250g butter
1 3/4 cups brown sugar
4 eggs
1/2 cup cocoa powder
1 cup plain flour
1/4 tsp baking powder
optional: 1 cup chopped walnuts
1. Heat oven to 160C
2. Melt chocolate and butter in a saucepan over low heat, stirring until combined.
3. In a bowl place mix sugar, eggs, cocoa, flour and baking powder.
4. Add the chocolate mixture, mix until combined.
5. Pour into 23cm square lined tin.
6. Bake for 35mins, until set.
7. Cool in tin.

Homemade strawberry jam
Recipe
1kg Strawberries (hulled and rinsed)
1kg CSR Jam Setting Sugar
A Knob of Butter
1. Crush strawberries.
2. Place strawberries and sugar in a large heavy based 6L pot.
3. Heat mixture over a low heat until sugar is dissolved. Do not allow to boil.
4. Add a knob of butter then increase heat and bring to a full rolling boil (a boil that cannot be stirred down).
5. Boil for 4 minutes only.
6. Remove from heat, skim off any foam, test for set and bottle in pre-sterilised jars.
Makes approximately 1.5kg of jam.

Cherry tomatoes from the Farmer's Market
The Kingston Farmers' Market is held on the 1st Saturday of each month (except January)
8am to 12:30pm
Sir William Fry Reserve, cnr Nepean Highway and Bay Rd, Highett
Stalls include breads, cheeses, meats, dips, fruit and vegies, free-range eggs, pasta and much more.
The $2 entrance donation will be going towards Chelsea Rotary community charities.

BBQ Salmon
Salmon marinated in dill, capers, olive oil, lemon served with broccollini and steamed rice

Recipe
2x 160g salmon fillets
clove of garlic
1tbs dill
1/4 cup lemon juice
1/4 cup capers, crushed
olive oil
2 cups cooked rice
1 bunch broccolini
1. Combine oil, garlic, lemon juice, capers and dill. Season with salt and pepper.
2. Marinade the salmon in a glass dish for 20 minutes.
3. Heat bbq on medium heat.
4. Bbq fillets, turning occasionally for 7-10 minutes.
5. Serve with steamed rice and broccolini
